- 1 sweet potato
- sea salt and ground pepper, to taste
- 1/2 cup low-fat Greek yogurt
- 2 tsp honey
- 1/2 tsp ginger, grated
- Preheat oven to 400 degrees.
- Slice potatoes into very thin slices.
- Sprinkle with slat and pepper.
